For the Crust:
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1/2 teaspoon peppermint extract
1 1/2 cups dark chocolate chunks
1/2 cup crushed peppermint candies
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a medium bowl, whisk together flour and baking soda. Set aside.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in vanilla extract, peppermint extract, and eggs one at a time.
Gradually mix in the flour mixture until just combined. Fold in chocolate chunks and crushed peppermint candies.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
