Peppermint Chocolate Chunk Cookies

Chewy chocolate chunk cookies with a refreshing hint of peppermint and festive crushed candy canes.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 cups semi-sweet chocolate chunks
  • 1/2 cup crushed peppermint candy canes

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and peppermint extracts.
  4. Gradually blend in the flour mixture. Fold in chocolate chunks and crushed candy canes.
  5. Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 9-11 minutes until edges are golden. Cool on baking sheet for 5 minutes before transferring to wire rack.
