For the Crust:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups semi-sweet chocolate chunks
- 1/2 cup crushed peppermint candy canes
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and peppermint extracts.
- Gradually blend in the flour mixture. Fold in chocolate chunks and crushed candy canes.
- Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 9-11 minutes until edges are golden. Cool on baking sheet for 5 minutes before transferring to wire rack.
