Pecan Pie Baked Oatmeal (Gluten-Free, Vegan-Friendly)

A warm, comforting baked oatmeal with all the flavors of classic pecan pie, made gluten-free and vegan-friendly. Perfect for a healthy holiday brunch or meal prep breakfast.

  • 2 cups rolled oats (certified gluten-free if needed)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups unsweetened almond milk (or other plant milk)
  • 1/4 cup pure maple syrup
  • 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water, let sit 5 minutes)
  • 2 tbsp vegan butter or coconut oil, melted
  • 1 1/2 tsp vanilla extract
  • For the pecan topping:
  • 2 tbsp vegan butter
  • 1/4 cup pure maple syrup
  • 1 cup pecans, roughly chopped or whole

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 2-quart baking dish.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix almond milk, maple syrup, flax egg, melted vegan butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir to combine.
  5. Pour the oatmeal mixture into the prepared baking dish.
  6. In a small saucepan, melt vegan butter and maple syrup over medium heat.
  7. Add pecans to the saucepan and stir to coat them in the syrup mixture.
  8. Pour the pecan topping evenly over the oatmeal mixture.
  9. Bake for 35-40 minutes until the oatmeal is set and golden around the edges.
  10. Remove from oven and let cool for about 5-10 minutes before serving.

Notes

Use rolled oats for the best texture; avoid steel-cut oats. To make a flax egg, mix 1 tbsp ground flaxseed with 3 tbsp water and let sit for 5 minutes until gelled. The baked oatmeal is done when browned around the edges and no longer gooey in the center.
