For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1 cup finely chopped pecans
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup caramel sauce
- 1/2 cup chopped pecans for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, 1 cup pecans, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes, then let cool.
- Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour filling over crust. Bake for 40-45 minutes until center is almost set.
- Cool cheesecake completely, then refrigerate for at least 4 hours.
- Top with caramel sauce and chopped pecans before serving.
