Tasty Peach Cobbler Cookies

Soft, cinnamon-spiced cookies with bursts of fresh peach flavor—a delicious twist on classic peach cobbler, perfect for sharing with a glass of milk or afternoon tea.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh ripe peaches, peeled and diced
  • Optional: pinch of nutmeg

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg (if using), and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in diced peaches.
  7. Drop rounded tablespoons of dough onto prepared sheets, spacing about 2 inches apart.
  8. Bake for 12–14 minutes, or until edges are lightly golden and centers are set.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use ripe, juicy peaches at the peak of their season. These cookies are best enjoyed the day they are made, but can be stored in an airtight container for up to 2 days. If you like extra warmth, add a pinch of nutmeg to the dry ingredients.
