For the Crust:
- 1 cup grated zucchini
- 1 cup grated potatoes
- 1/2 cup grated Parmesan cheese
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 2 large eggs
- 1/4 cup milk
- 2 tbsp melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Squeeze excess moisture from grated zucchini and potatoes using a clean towel.
- In a large bowl, mix flour, baking powder, salt, pepper, and garlic powder.
- In another bowl, whisk eggs, milk, and melted butter. Stir in zucchini, potatoes, and Parmesan.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- Spoon batter into muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Cool for 5 minutes before removing from tin.

You can customize the seasonings to taste.
