Pancake Sausage Casserole

A cozy breakfast casserole that combines browned pork sausage with a sweet and savory pancake batter, baked to golden perfection.

Ingredients

Scale
  • 1 pound pork sausage
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F and spray a 9×13-inch baking dish with nonstick spray.
  2. Cook the sausage in a skillet over medium heat until browned and crumbly; drain excess fat if desired.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients and stir just until combined; lumps are okay.
  5. Stir the browned sausage into the batter until evenly distributed.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for about 25 minutes or until a toothpick inserted in the center comes out clean and the top is golden and puffy.
  8. Let the casserole rest for 10 minutes before slicing and serving with syrup, butter, or powdered sugar as desired.

Notes

Letting the casserole rest before slicing helps it set and makes for cleaner slices. You can customize toppings with syrup, butter, or powdered sugar for extra flavor.
