One Pot Gnocchi Chicken Pot Pie

This one pot gnocchi chicken pot pie is the ultimate comfort food! It’s loaded with chicken, vegetables, and pillowy gnocchi in a creamy sauce, all topped with a flaky, buttery crust. It’s the perfect cozy meal for a chilly night!

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon dried thyme
  • 1 (16-ounce) package potato gnocchi
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400°F.
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the onion, garlic, carrots, and celery to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute.
  5. Slowly whisk in the chicken broth and milk until smooth. Bring to a simmer and cook until the sauce has thickened, about 3-5 minutes.
  6. Stir in the thyme, gnocchi, peas, and cooked chicken. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  7. Roll out the puff pastry to fit the top of your skillet. Place the pastry over the filling and brush with the beaten egg. Cut a few slits in the top to allow steam to escape.
  8. Bake for 20-25 minutes, or until the pastry is golden brown and puffed. Let cool for 5-10 minutes before serving.

Notes

For a golden, flaky crust, ensure your pastry is fully thawed and brush it generously with the egg wash. Let the pot pie rest for 5-10 minutes after baking for the filling to set. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
