One-Pan Garlic Herb Chicken with Potatoes & Green Beans

A simple and flavorful one-pan meal featuring garlic herb chicken breasts roasted alongside tender potatoes and fresh green beans, all cooked together for an easy and delicious dinner.

  • 4 boneless, skinless chicken breasts
  • 1 bag (20 oz) baby red potatoes or any baby potatoes
  • 1 pound fresh green beans, trimmed and cut in half
  • 1/4 cup chicken broth or bone broth
  • 1/4 cup butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Avocado oil or cooking spray

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.
  2. In a small bowl, combine the melted butter, chicken broth, minced garlic, chopped parsley, and chopped thyme to make the garlic herb butter.
  3. Place the chicken breasts on the baking sheet and arrange the potatoes around the chicken. Drizzle or spray with avocado oil and season with salt and pepper.
  4. Drizzle the garlic herb butter evenly over the chicken and potatoes.
  5. Bake in the preheated oven for 15 minutes.
  6. Remove the baking sheet from the oven and add the green beans, tossing them with the potatoes to coat in the garlic herb butter.
  7. Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes and green beans are tender.
  8. Optional: Turn on the broiler for the last few minutes to brown and crisp the chicken and vegetables.

Notes

For best results, use fresh herbs for the garlic herb butter. Adding the green beans halfway through cooking ensures they stay crisp-tender. Broiling at the end adds a nice golden finish.
