Ingredients

Scale
  • 5 slices bacon, chopped
  • 1/4 cup red onion, minced
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup apple juice
  • 1 apple, chopped (about 2/3 cup)
  • 2 tablespoons fresh parsley, minced
  • 1/2 teaspoon dried sage
  • 1 cup panko bread crumbs
  • 2 pounds ground chicken
  • 6 slices Monterey Jack cheese (or cheddar, smoked gruyere, etc.)
  • 6 brioche buns
  • Lettuce
  • 1/2 red onion, sliced thin
  • For the sauce:
  • 1/2 cup Dijon mustard
  • 2 tablespoons maple syrup
  • 2 tablespoons mayonnaise

Instructions

  1. Cook chopped bacon in a skillet until crisp; remove and drain on paper towels.
  2. In the bacon fat, sauté minced red onion and garlic until softened.
  3. In a large bowl, combine cooked bacon, sautéed onion and garlic, salt, pepper, apple juice, chopped apple, parsley, dried sage, panko bread crumbs, and ground chicken.
  4. Mix gently until just combined; form into 6 patties.
  5. Preheat grill or skillet over medium heat and cook patties about 5-6 minutes per side or until internal temperature reaches 165°F (74°C).
  6. During the last minute of cooking, top each patty with a slice of cheese and allow to melt.
  7. Toast brioche buns lightly on the grill or in a toaster.
  8. Mix Dijon mustard, maple syrup, and mayonnaise to make the maple mustard sauce.
  9. Assemble burgers by spreading sauce on buns, adding lettuce, the chicken patty with melted cheese, and thinly sliced red onion.
  10. Serve immediately.

Notes

For best flavor, use fresh apples and quality maple syrup. The sauce can be prepared ahead and refrigerated. These burgers pair well with a crisp side salad or sweet potato fries.
