No Sugar No Flour Carrot Cake

A healthy and delicious carrot cake made without sugar or flour, perfect for a guilt-free treat.

For the Crust:

  • 2 cups grated carrots
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix grated carrots, almond flour, coconut flour, eggs, coconut oil, honey or maple syrup (if using), vanilla extract, cinnamon, nutmeg, baking soda, and salt until well combined.
  3. Fold in chopped walnuts if desired.
  4. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool before serving.

Notes

You can customize the seasonings to taste.
