For the Crust:
- 2 cups grated carrots
- 1 cup almond flour
- 1/2 cup coconut flour
- 3 eggs
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup (optional)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix grated carrots, almond flour, coconut flour, eggs, coconut oil, honey or maple syrup (if using), vanilla extract, cinnamon, nutmeg, baking soda, and salt until well combined.
- Fold in chopped walnuts if desired.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before serving.
