For the Crust:
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup dark chocolate chips (optional)
Instructions
1. Prepare the Crust:
- In a large bowl, mix rolled oats, chopped nuts, shredded coconut, and cinnamon.
- Add almond butter, honey or maple syrup, and vanilla extract. Stir until well combined.
- Fold in dark chocolate chips if using.
- Press the mixture firmly into a lined baking dish or form into small energy balls.
- Refrigerate for at least 30 minutes to set before serving.
