For the Crust:
- 1 cup granulated sugar
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1 tsp vanilla extract
- 1 1/2 cups quick oats
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine sugar, milk, and butter. Bring to a boil over medium heat, stirring constantly.
- Boil for 1 minute, then remove from heat and stir in vanilla extract.
- Quickly stir in oats, shredded coconut, and chopped pecans until well combined.
- Drop by tablespoonfuls onto wax paper or a silicone mat. Let cool until set, about 20 minutes.
