For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, whipped
- 2 cups fresh peaches, diced
- 1/2 cup chopped pecans
- 1/4 cup caramel sauce (optional)
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a 9-inch springform pan to form the crust.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in the whipped cream until fully incorporated.
- Spread half of the cheesecake mixture over the crust. Layer half of the diced peaches on top.
- Repeat with the remaining cheesecake mixture and peaches.
- Sprinkle chopped pecans over the top and drizzle with caramel sauce if desired.
- Refrigerate for at least 4 hours or overnight before serving.
