No Bake Peach Pecan Cheesecake Ring

A delightful no-bake cheesecake with fresh peaches and crunchy pecans, perfect for summer gatherings.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, whipped
  • 2 cups fresh peaches, diced
  • 1/2 cup chopped pecans
  • 1/4 cup caramel sauce (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a 9-inch springform pan to form the crust.
  2. In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Gently fold in the whipped cream until fully incorporated.
  4. Spread half of the cheesecake mixture over the crust. Layer half of the diced peaches on top.
  5. Repeat with the remaining cheesecake mixture and peaches.
  6. Sprinkle chopped pecans over the top and drizzle with caramel sauce if desired.
  7. Refrigerate for at least 4 hours or overnight before serving.

Notes
