For the Crust:
- 1 1/2 cups warm water
- 1 tbsp sugar
- 2 tsp salt
- 1 packet active dry yeast
- 4 1/2 cups all-purpose flour
- 4 tbsp unsalted butter, melted
- 8 oz mozzarella cheese, cut into sticks
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk, beaten
- Coarse salt for sprinkling
Instructions
1. Prepare the Crust:
- In a large bowl, mix warm water, sugar, and salt. Sprinkle yeast on top and let sit for 5 minutes until foamy.
- Add flour and melted butter to the yeast mixture. Stir until a dough forms, then knead for 5-7 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat oven to 450°F (230°C). Bring 10 cups of water and baking soda to a boil in a large pot.
- Divide dough into 8 equal pieces. Flatten each piece, place a mozzarella stick in the center, and roll to seal completely.
- Shape each stuffed dough piece into a pretzel shape. Boil each pretzel for 30 seconds, then transfer to a baking sheet.
- Brush pretzels with beaten egg yolk and sprinkle with coarse salt. Bake for 12-15 minutes until golden brown.
