Mouthwatering Salmon Balls with Creamy Avocado Sauce

For the Crust:

  • 1 lb fresh salmon, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 large ripe avocado
  • 1/4 cup Greek yogurt
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 small garlic clove, minced
  • 2 tbsp olive oil for baking

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with olive oil.
  2. In a bowl, combine chopped salmon, breadcrumbs, egg, dill, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix gently until well combined.
  3. Shape the mixture into 1-inch balls and place them on the prepared baking sheet. Bake for 18-20 minutes, or until golden and cooked through.
  4. While the salmon balls bake, prepare the sauce: In a blender, combine avocado, Greek yogurt, cilantro, lime juice, and minced garlic. Blend until smooth. Season with salt to taste.
  5. Serve the warm salmon balls with the creamy avocado sauce on the side for dipping.
