For the Crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1/4 teaspoon baking powder
- Pinch of salt
- Additional powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- In a bowl, mix flour, powdered sugar, and butter until crumbly. Press into the muffin tin to form crusts.
- Bake crusts for 10 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon zest, lemon juice, baking powder, and salt until smooth.
- Pour lemon mixture over baked crusts and return to oven for 15-20 minutes until set.
- Cool completely before dusting with powdered sugar.
