For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 4 cups fresh or frozen cherries, pitted
- 1/2 cup brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough comes together. Press two-thirds of the dough into the bottom of the prepared pan.
- In another bowl, combine cherries, brown sugar, cornstarch, vanilla extract, and almond extract. Spread the cherry mixture over the crust.
- Crumble the remaining dough over the cherry layer. Bake for 30-35 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
