A warm, hearty bowl of comfort featuring tender pasta, chickpeas, and a fragrant rosemary-infused finishing oil, perfect for a cozy meal.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 sprig fresh rosemary
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 pound small pasta (such as ditalini or mini elbows)
  • 4 cups water or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving
  • Optional: fresh spinach or chopped fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the garlic, red pepper flakes, and rosemary sprig; cook until fragrant, about 1-2 minutes.
  2. Add the chickpeas and water or vegetable broth to the pot. Bring to a boil.
  3. Add the pasta and cook until al dente, about 8-10 minutes, stirring occasionally.
  4. Remove the rosemary sprig. Season with salt and pepper to taste.
  5. If using spinach, add it to the hot pasta and stir until wilted.
  6. Serve hot, topped with grated Parmesan cheese and a drizzle of the rosemary-infused oil.

Notes

This dish is versatile; you can substitute vegetable broth for water for more flavor and add fresh herbs like parsley or spinach for extra nutrition. Leftovers taste great and can be reheated easily.
