No Bake Mint Chocolate Bars

No Bake Mint Chocolate Bars with a graham cracker crust, creamy mint filling, and chocolate ganache, perfect for the holiday season.

  • 1/2 cup butter (for base)
  • 1/3 cup cocoa (for base)
  • 1/4 cup sugar (for base)
  • 1 egg (for base)
  • 2 cups graham cracker crumbs (for base)
  • 3/4 cup shredded coconut (for base)
  • 1/4 cup butter (for filling)
  • 2 cups powdered icing sugar (for filling)
  • 23 tablespoons milk (for filling)
  • 1 teaspoon mint extract (for filling)
  • green food coloring (optional, for filling)
  • 2/3 cup chocolate chips or chopped chocolate (for ganache)
  • 2 tablespoons butter (for ganache)

Instructions

  1. Line an 8×8 inch pan with tin foil.
  2. In a large microwave-safe bowl, combine 1/2 cup butter, sugar, and cocoa. Microwave on high for 45 seconds. Stir and microwave another 20-30 seconds if necessary until melted and combined.
  3. Let cool 5 minutes. Quickly whisk in the egg (mixture thickens). Stir in graham cracker crumbs and shredded coconut until combined. Press into prepared pan.
  4. For the filling: Beat 1/4 cup butter until smooth. Add powdered sugar and 2 tablespoons milk and beat until smooth, adjusting consistency with more milk or sugar if needed.
  5. Add mint extract and green food coloring as desired. Spread mint filling over the base in the pan.
  6. For ganache: In a microwave-safe bowl, combine chocolate and 2 tablespoons butter. Melt in 20-second intervals, stirring until smooth.
  7. Pour ganache over filling in the pan.
  8. Refrigerate until completely set, at least 2-3 hours, before slicing and serving.

Notes

Store refrigerated or freeze for up to a few months. Green food coloring is optional to enhance the minty look. This dessert is best served chilled.
