Mint Brownies

Rich, fudgy brownies layered with a creamy mint frosting and topped with chocolate ganache, perfect for mint lovers.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 4 ounces semisweet chocolate, chopped
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium saucepan, melt 1 cup butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla.
  3. Beat in cocoa, flour, salt, and baking powder. Spread batter into prepared pan.
  4. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool completely.
  5. For the mint frosting, beat powdered sugar, 1/4 cup softened butter, heavy cream, and peppermint extract until smooth and fluffy.
  6. Spread the mint frosting evenly over the cooled brownies.
  7. For the ganache, heat chopped chocolate and 2 tablespoons heavy cream in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Pour ganache over the mint layer and spread evenly. Refrigerate until set before cutting into squares.

Notes

For best results, allow brownies to cool completely before frosting to prevent melting. You can substitute peppermint extract with fresh mint leaves infused in cream for a natural flavor.
