  • ¾ cup graham crackers, finely crushed
  • 2 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, room temperature
  • ¼ cup granulated sugar
  • ¼ cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 egg, room temperature
  • ⅓ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon orange zest (optional)
  • 2 teaspoons brown sugar
  • 1 tablespoon flour
  • Whipped cream (for garnish)
  • Grated nutmeg (for garnish)

Instructions

  1. Preheat oven and prepare a muffin tin with liners or grease.
  2. Make the crust by mixing crushed graham crackers with melted butter; press into the bottom of each muffin cup.
  3. Beat cream cheese until smooth, then add granulated sugar, sour cream, vanilla, and egg; mix until combined.
  4. In a separate bowl, combine pumpkin puree, pumpkin pie spice, orange zest, brown sugar, and flour to make the pumpkin mixture.
  5. Divide half of the plain cheesecake batter into the muffin cups over the crust.
  6. Add a spoonful of pumpkin mixture on top of the plain batter in each cup.
  7. Add the remaining plain cheesecake batter over the pumpkin layer.
  8. Use a toothpick or skewer to swirl the pumpkin mixture into the cheesecake batter to create a marbled effect.
  9. Bake for about 30 minutes until the edges are set but the center still jiggles slightly.
  10. Cool completely, then refrigerate for at least 1 hour before serving.
  11. Garnish with whipped cream and grated nutmeg if desired.

Notes

For best results, use room temperature ingredients to ensure a smooth batter. Avoid overmixing after adding eggs to prevent cracks. The cheesecakes are done when the edges are set but the center has a slight jiggle. You can substitute the graham cracker crust with gingersnap or vanilla wafer crumbs for a flavor twist.
