Mini Pineapple Cakes

Delicious bite-sized pineapple cakes with a buttery crust and sweet pineapple filling.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 cup pineapple jam
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and powdered sugar until light and fluffy.
  3. Add egg yolk, vanilla extract, and salt. Mix well.
  4. Gradually add flour and mix until a dough forms.
  5. Roll the dough into small balls and flatten slightly. Make an indentation in the center of each.
  6. Fill each indentation with pineapple jam.
  7. Bake for 15-18 minutes or until edges are golden brown.
  8. Let cool before serving.
