Mini Chocolate Coconut Pecan Tarts

Delicious bite-sized tarts with a rich chocolate, coconut, and pecan filling in a buttery crust.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 3 tbsp cold water
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a mini tart pan or muffin tin.
  2. In a food processor, combine flour and butter until crumbly. Add cold water and pulse until dough forms.
  3. Press dough into tart molds and bake for 10 minutes until lightly golden.
  4. In a saucepan, melt chocolate chips with heavy cream over low heat. Stir in brown sugar, vanilla, coconut, and pecans.
  5. Spoon filling into pre-baked tart shells and bake for another 15 minutes.
  6. Let cool before serving.
