Mini Cherry Peanut Butter Cheesecakes

Creamy peanut butter cheesecakes with a graham cracker crust and sweet cherry topping, perfect for individual servings.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 can cherry pie filling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into liners and bake for 8 minutes. Cool completely.
  3. Beat cream cheese, peanut butter, powdered sugar, and vanilla until smooth. Whip cream separately, then fold into cream cheese mixture.
  4. Spoon filling over cooled crusts. Refrigerate for at least 4 hours. Top with cherry pie filling before serving.
