For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and sugar. Press 1 tbsp into each liner to form crusts.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spoon over crusts.
- Bake for 20-25 minutes until set. Cool completely.
- Cook apples, butter, brown sugar, and cinnamon until tender. Cool slightly.
- Top each cheesecake with apple mixture and drizzle with caramel sauce before serving.
