For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 tbsp sugar
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 medium apple, peeled and diced
- 2 tbsp butter
- 2 tbsp brown sugar
- 1/4 tsp cinnamon
- Caramel sauce for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press into the bottom of each liner.
- Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix just until combined.
- Spoon cheesecake mixture over crusts. Bake for 15-18 minutes until set. Cool completely.
- In a skillet, melt 2 tbsp butter over medium heat. Add apples, brown sugar, and cinnamon. Cook until apples are tender, about 5 minutes.
- Top each cheesecake bite with apple mixture and drizzle with caramel sauce.
