Mini Caramel Apple Cheesecake Bites

Delicious bite-sized cheesecakes with a graham cracker crust, creamy filling, and topped with caramelized apples.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 medium apple, peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • Caramel sauce for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, melted butter, and 1 tbsp sugar. Press into the bottom of each liner.
  3. Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix just until combined.
  4. Spoon cheesecake mixture over crusts. Bake for 15-18 minutes until set. Cool completely.
  5. In a skillet, melt 2 tbsp butter over medium heat. Add apples, brown sugar, and cinnamon. Cook until apples are tender, about 5 minutes.
  6. Top each cheesecake bite with apple mixture and drizzle with caramel sauce.
