Mini Caramel Apple Cheesecake Bites

Delicious bite-sized cheesecakes with a graham cracker crust, creamy cheesecake filling, and topped with caramelized apples.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 medium apple, peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/4 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs, 3 tbsp melted butter, and 1 tbsp sugar. Press about 1 tsp into each liner.
  3. Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix just until combined.
  4. Spoon cheesecake filling over crusts, filling about 3/4 full. Bake for 15-18 minutes until set. Cool completely.
  5. Cook diced apple in 2 tbsp butter over medium heat. Add brown sugar and cinnamon, cook until softened. Cool slightly.
  6. Top each cheesecake with apple mixture and drizzle with caramel sauce. Refrigerate until ready to serve.

Notes

You can customize the seasonings to taste.
