For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 tbsp sugar
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 medium apple, peeled and diced
- 2 tbsp butter
- 2 tbsp brown sugar
- 1/4 tsp cinnamon
- 1/4 cup caramel sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, 3 tbsp melted butter, and 1 tbsp sugar. Press about 1 tsp into each liner.
- Beat cream cheese, 1/4 cup sugar, and vanilla until smooth. Add egg and mix just until combined.
- Spoon cheesecake filling over crusts, filling about 3/4 full. Bake for 15-18 minutes until set. Cool completely.
- Cook diced apple in 2 tbsp butter over medium heat. Add brown sugar and cinnamon, cook until softened. Cool slightly.
- Top each cheesecake with apple mixture and drizzle with caramel sauce. Refrigerate until ready to serve.
