Mexican White Trash Casserole

A cheesy, crunchy casserole loaded with chicken, Doritos, and bold Mexican-inspired flavors.

  • 11 oz. bag of Cheese Doritos
  • 2 cups shredded cooked chicken
  • 1 can of cream of chicken soup
  • 1 cup sour cream
  • 8 oz. shredded cheddar cheese
  • 10 oz. can RoTel tomatoes with chilies
  • 1/2 envelope of Taco seasoning
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F. Spray a 2-quart casserole dish with nonstick spray.
  2. In a large mixing bowl, combine the chicken, cream of chicken soup, RoTel tomatoes, sour cream, milk, taco seasoning, and about 1½ cups of cheese. Stir until well-blended.
  3. Spread half of the crushed Doritos on the bottom of the dish. Top with half of the chicken mixture. Repeat with the remaining Doritos and chicken mixture. Sprinkle the last of the cheese on top.
  4. Cover with foil and bake for about 35 minutes. For a crispier top, remove the foil during the last 10 minutes of baking.
  5. Let the casserole cool for a few minutes before serving.

Notes

This casserole is perfect for weeknight dinners or potlucks. You can customize it by adding jalapeños for extra heat or using different proteins like beef or turkey.
