For the Crust:

  • 4 cups shredded green cabbage
  • 1 cup cooked corn kernels (fresh or frozen)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the shredded cabbage, corn, cilantro, and cotija cheese.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, minced garlic, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
