For the Crust:

  • 2 cups elbow macaroni, cooked and cooled
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine cooked macaroni, corn, black beans, red bell pepper, red onion, and cilantro.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the macaroni mixture and toss until evenly coated. Refrigerate for at least 1 hour before serving.
