For the Crust:
- 2 cups elbow macaroni, cooked and cooled
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine cooked macaroni, corn, black beans, red bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and pepper.
- Pour the dressing over the macaroni mixture and toss until evenly coated. Refrigerate for at least 1 hour before serving.
