These Melted Mozzarella & Ranch Chicken Bombs combine creamy mozzarella cheese, tangy ranch seasoning, and tender chicken wrapped in golden puff pastry for an irresistible, cheesy dinner bite.

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • 1 package puff pastry sheets (thawed)
  • 1/2 cup grated Parmesan cheese
  • 1 cup bread crumbs
  • 1/2 cup all-purpose flour
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, mix shredded mozzarella cheese with ranch dressing.
  4. Roll out puff pastry sheets and cut into squares large enough to wrap each chicken breast.
  5. Place a chicken breast on each puff pastry square, spoon the mozzarella and ranch mixture on top.
  6. Fold the pastry over the chicken and cheese, sealing edges with beaten egg.
  7. Brush the outside of each wrapped chicken bomb with egg wash.
  8. Sprinkle grated Parmesan cheese and bread crumbs over the top for extra crispiness.
  9. Place the chicken bombs on a greased baking sheet.
  10. Bake for 25-30 minutes or until pastry is golden brown and chicken is cooked through.
  11. Let rest for 5 minutes before serving.

Notes

For best results, ensure the chicken breasts are pounded to an even thickness for uniform cooking. Serve with a side salad or steamed vegetables for a complete meal.
