Melted Mozzarella & Ranch Chicken Bombs

These Melted Mozzarella & Ranch Chicken Bombs combine juicy chicken breasts seasoned with ranch and spices, stuffed with melted mozzarella cheese, and wrapped in golden puff pastry for a deliciously cheesy and savory appetizer or main dish.

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 8 ounces shredded mozzarella cheese
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ranch seasoning, garlic powder, paprika, salt, and pepper.
  3. Coat chicken breasts evenly with the seasoning mixture.
  4. Cut each chicken breast in half horizontally to create pockets.
  5. Stuff each pocket with shredded mozzarella cheese.
  6. Roll out puff pastry sheet and cut into squares large enough to wrap each stuffed chicken piece.
  7. Place each stuffed chicken piece on a puff pastry square and wrap completely, sealing edges with beaten egg.
  8. Brush the tops of the wrapped chicken bombs with the remaining beaten egg.
  9. Place on a baking sheet lined with parchment paper.
  10. Bake for 25-30 minutes or until puff pastry is golden brown and chicken is cooked through.
  11. Let rest for 5 minutes before serving.

Notes

For extra crispiness, brush the puff pastry with egg wash twice before baking. Serve with a side of ranch dressing for dipping to enhance the flavor.
