For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, crushed
- 1/4 cup powdered sugar (for rolling)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
- Fold in crushed freeze-dried strawberries until evenly distributed.
- Roll dough into 1-inch balls, then roll each ball in powdered sugar to coat.
- Place cookies 2 inches apart on prepared baking sheets. Bake for 10-12 minutes or until edges are lightly golden.
- Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack.
