Mediterranean Red Lentil Soup

A healthy and delicious Mediterranean red lentil soup made with tomatoes, warming Mediterranean spices, and fiery harissa.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons lemon juice
  • 1 teaspoon harissa (optional)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  2. Add the garlic, cumin, and coriander, and sauté for another minute until fragrant.
  3. Stir in the lentils, broth, and diced tomatoes.
  4. Bring the liquid to a boil, then reduce heat to a simmer and cook uncovered until lentils are soft, about 20 minutes. Add water if soup becomes too thick.
  5. Stir in lemon juice and harissa (if using). Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with parsley or cilantro.

Notes

This soup can be made on the stovetop or in an Instant Pot. Adjust the thickness by adding water as needed. Harissa adds a spicy kick but can be omitted for a milder flavor.
