For the Crust:
1.5 lbs boneless, skinless chicken breasts, cubed
2 medium zucchinis, sliced
1 red bell pepper, diced
1/2 red onion, thinly sliced
3 cloves garlic, minced
1/4 cup olive oil
1 tsp dried oregano
1 tsp dried basil
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C).
In a large bowl, combine chicken, zucchini, bell pepper, red onion, garlic, olive oil, oregano, basil, paprika, salt, and black pepper. Toss to coat evenly.
Transfer the mixture to a 9×13-inch baking dish and spread in an even layer.
Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
Remove from oven and sprinkle with feta cheese and parsley before serving.
