For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, zucchini, bell pepper, red onion, garlic, olive oil, oregano, basil, paprika, salt, and black pepper. Toss to coat evenly.
- Transfer the mixture to a 9×13-inch baking dish and spread in an even layer.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven and sprinkle with feta cheese and parsley before serving.
