For the Crust:
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup kalamata olives, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine zucchini, bell pepper, red onion, olive oil, garlic, oregano, basil, paprika, salt, and black pepper. Toss to coat.
- Arrange chicken breasts in a baking dish and surround with the vegetable mixture.
- Bake for 25-30 minutes or until chicken reaches 165°F (74°C) internally.
- Sprinkle with feta cheese and olives during the last 5 minutes of baking.
- Let rest for 5 minutes before serving.
