For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, toss chicken, zucchini, bell pepper, tomatoes, and olives with olive oil, oregano, garlic powder, paprika, salt, and pepper.
- Spread mixture evenly in a baking dish and bake for 25 minutes.
- Sprinkle feta cheese over the top and bake for an additional 5 minutes until cheese softens and chicken is cooked through.
