Marry Me Chickpeas Recipe

Ingredients

  • 1/2 cup cashews (soaked (or quick boiled))
  • 1/2 cup low sodium vegetable broth
  • 1 cup plain (unsweetened coconut milk)
  • 1 Tablespoon lemon juice
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon black pepper
  • 1 Tablespoon coconut aminos (or regular aminos)
  • 1 Tablespoon tomato paste
  • 1/2 cup sundried tomatoes (julienned or chopped)
  • 2 15- ounce cans chickpeas (low sodium, drained and rinsed)
  • 2 to 3 cups fresh chopped spinach
  • 4 to 6 fresh basil leaves (chopped or torn)

Instructions

  1. Prepare the Cashew Cream Sauce
  2. Sauté the Aromatics
  3. Add Other Base Ingredients
  4. Wilt the Spinach and Finish with Basil
  5. Serve and Enjoy!
