  • 1 pound boneless skinless chicken breasts
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup small pasta (such as ditalini or orzo)
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken breasts and cook until browned and cooked through, about 5-7 minutes per side. Remove and shred the chicken.
  3. In the same pot, add garlic and sun-dried tomatoes; sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add pasta and cook until al dente, about 8-10 minutes.
  6. Reduce heat to low and stir in heavy cream, Parmesan cheese, and shredded chicken.
  7. Add fresh spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper to taste and serve warm.
