Marry Me Chicken Pasta

A creamy, tangy, and savory pasta dish featuring tender chicken, sun-dried tomatoes, and a rich parmesan sauce that’s sure to impress.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Fresh basil, for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Season the chicken pieces with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-8 minutes until no longer pink. Transfer to a plate and set aside.
  4. In the same skillet, melt butter. Add garlic and cook for 1 minute. Stir in flour and cook for another minute.
  5. Gradually whisk in chicken broth, then add heavy cream, parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Simmer until the sauce thickens.
  6. Return the chicken to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
  7. Add the cooked pasta to the skillet and toss to coat in the sauce. Garnish with fresh basil before serving.

Notes

For extra flavor, use freshly grated parmesan cheese. If the sauce is too thick, add a splash of pasta water to reach desired consistency. This dish pairs well with a crisp green salad.
