Marinated Cucumbers, Onions, and Tomatoes

A simple, refreshing marinated salad featuring crisp cucumbers, fresh tomatoes, and onions in a tangy vinegar-based dressing. This classic side dish is easy to customize and perfect for summer gatherings.

Ingredients

  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper
  • 23 medium cucumbers, peeled and sliced
  • 3 medium tomatoes, cut into wedges or chopped
  • 1 medium sweet onion, sliced into rings

Instructions

  1. In a large bowl, whisk together water, vinegar, vegetable oil, sugar, salt, and pepper until well combined.
  2. Add sliced cucumbers, tomatoes, and onion to the bowl and stir to coat evenly with the dressing.
  3. Cover the bowl and refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

Add chopped fresh dill, dried Italian seasoning, or fresh basil for additional flavor. For crispier cucumbers, salt sliced cucumbers in a colander for 10 minutes, rinse, and pat dry before adding to the dressing. Add a few ice cubes just before serving for extra coldness.
