Soft, chewy pumpkin cookies infused with warm pumpkin spice and sweetened with pure maple syrup, topped with a smooth maple glaze for a perfect fall treat.

Ingredients

Scale
  • 1 cup pumpkin puree (canned or homemade)
  • 1/2 cup pure maple syrup
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • For the maple glaze:
  • 1 cup powdered sugar
  • 23 tablespoons pure maple syrup
  • 12 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, combine melted butter, pumpkin puree, maple syrup, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until edges are set but centers remain soft.
  7. Allow cookies to cool completely on a wire rack before glazing.
  8. To make the maple glaze, whisk together powdered sugar, maple syrup, milk, and vanilla extract until smooth and pourable.
  9. Drizzle or spread the glaze over cooled cookies and let set for about 10 minutes before serving.

Notes

Use pure maple syrup for authentic flavor. Chilling the dough for 30 minutes before baking can help achieve thicker cookies. Do not overbake to keep cookies soft and moist. Ensure cookies are completely cool before glazing to prevent melting.
