Magic Pecan Cheesecake Bars

Deliciously rich and creamy cheesecake bars with a crunchy pecan topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 2 tbsp unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
  4. Bake for 20 minutes. Meanwhile, mix pecans, brown sugar, and 2 tbsp melted butter in a bowl.
  5. Sprinkle pecan mixture over cheesecake and bake for another 10 minutes. Let cool completely before cutting into bars.
