These irresistible Magic Brownie Cookies have a rich, fudgy brownie texture, a crackly exterior, and are loaded with flavor including coconut, butterscotch, walnuts, and chocolate.

  • 6 tablespoons unsalted butter
  • 2 teaspoons instant espresso powder
  • 2 large eggs, room temperature
  • ¾ cup granulated sugar

  • ⅓ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 cup chopped walnuts
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup sweetened coconut flakes
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt 1 ¼ cups semi-sweet chocolate chips and 6 tablespoons unsalted butter together in short intervals, stirring until smooth.
  3. Stir in 2 teaspoons instant espresso powder until dissolved.
  4. In a separate bowl, beat 2 large eggs with ¾ cup granulated sugar and 1 tablespoon vanilla extract until combined.
  5. Add the melted chocolate mixture to the egg mixture and mix well.
  6. In another bowl, whisk together ⅓ cup all-purpose flour, ½ teaspoon kosher salt, and 1 teaspoon baking powder.
  7. Gradually fold the dry ingredients into the wet ingredients until just combined.
  8. Add 1 cup chopped walnuts, 1 cup semi-sweet chocolate chips, 1 cup butterscotch chips, and 1 cup sweetened coconut flakes mixed with 1 tablespoon flour; fold gently to combine.
  9. Drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing about 2 inches apart.
  10. Bake for 10-12 minutes or until the edges are set and the tops have a crackly appearance.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Espresso powder enhances the chocolate flavor but can be omitted if unavailable. The combination of coconut, butterscotch, and walnuts adds a unique texture and flavor to these fudgy cookies.
