Mac and Cheese Bacon Burger Rolls

These mac and cheese bacon burger rolls combine creamy mac and cheese, seasoned ground beef, and crispy bacon all wrapped in a golden, crunchy tortilla for a handheld comfort food that satisfies every craving.

Ingredients

Scale
  • 1 lb 80/20 ground beef
  • 2 cups cooked elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 6 slices crispy bacon, crumbled
  • 4 large flour tortillas (burrito size)
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Optional: butter or oil for cooking

Instructions

  1. Heat a skillet over medium heat and cook the ground beef until browned and cooked through. Season with salt and pepper, then drain excess fat.
  2. In a large bowl, combine the cooked macaroni, shredded sharp cheddar cheese, and crumbled crispy bacon.
  3. Add the cooked ground beef to the mac and cheese mixture and stir to combine evenly.
  4. Lay out a large flour tortilla and spread a thin layer of ketchup and mustard over it.
  5. Place a generous amount of the mac and cheese bacon burger mixture onto the center of the tortilla.
  6. Roll the tortilla tightly around the filling, folding in the sides to secure the filling inside.
  7. Heat a skillet over medium heat and lightly butter or oil it. Place the rolled tortillas seam side down and cook until golden brown and crispy on all sides, about 2-3 minutes per side.
  8. Remove from heat, slice if desired, and serve warm.

Notes

Use 80/20 ground beef for juiciness and flavor. Ensure the mac and cheese is fully cooked but not mushy to maintain texture. Crisp bacon adds essential texture contrast. Burrito-size tortillas work best for rolling and holding the filling.
