Luscious Walnut Banana Caramel Cake

A moist banana cake layered with luscious caramel and crunchy walnuts, topped with cream cheese frosting for a rich and flavorful dessert.

  • 2¼ cups (280 g) all-purpose flour
  • ¼ cup (25 g) cornstarch
  • 1 tsp baking powder
  • 1 tsp baking soda

  • large ripe bananas (about 410 g), peeled
  • ½ cup (113 g) unsalted butter, room temperature
  • ½ cup (105 g) vegetable oil (canola preferred)
  • 1½ cups (300 g) granulated sugar
  • 3 large eggs, room temperature
  • 1½ tsp vanilla extract
  • ½ cup (125 g) Greek yogurt, room temperature
  • ½ cup (100 g) granulated sugar (for caramel)
  • 2 tbsp water (for caramel)
  • ¼ cup (60 g) cream (min 34% fat), room temperature
  • 2 tbsp (28 g) unsalted butter, cold (for caramel)
  • 1 pinch salt (for caramel)
  • 1 cup chopped walnuts
  • Cream cheese frosting (ingredients not fully listed here)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, sift together flour, cornstarch, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream butter, oil, and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in mashed bananas and Greek yogurt until combined.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Fold in chopped walnuts gently.
  8. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. To make caramel, combine sugar and water in a saucepan over medium heat. Cook without stirring until sugar dissolves and turns amber.
  11. Remove from heat and carefully whisk in cream, butter, and salt until smooth. Let cool.
  12. Once cakes are cool, spread caramel between layers and on top.
  13. Frost cake with cream cheese frosting as desired.
  14. Chill cake for at least 1 hour before serving to set frosting and caramel.

Notes

Use ripe bananas for maximum sweetness and moisture. The caramel should be handled carefully as it is very hot. Chilling the cake helps the caramel and frosting set nicely for easier slicing.
