For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/3 cup plain yogurt
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch loaf pan.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter and sugar until light. Beat in eggs one at a time.
- Mix in mashed bananas, yogurt, and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in walnuts.
- Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
