Luscious Vanilla Banana Walnut Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light. Beat in eggs one at a time.
  4. Mix in mashed bananas, yogurt, and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in walnuts.
  6. Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
