For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup crushed pistachios
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 tsp vanilla extract
  • 1 cup chopped cherries
  • 1/2 cup chopped pistachios (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs, crushed pistachios, and melted butter. Press into a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, lime juice, and vanilla.
  3. Fold in chopped cherries. Pour filling over crust. Bake for 50-55 minutes until center is set.
  4. Cool in the oven with the door slightly open, then refrigerate for at least 4 hours.
  5. Top with chopped pistachios before serving.
