For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup sour cream
- 2 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix melted butter, eggs, sour cream, lemon zest, and lemon juice.
- Combine wet and dry ingredients until just mixed (do not overmix).
- In a small bowl, beat cream cheese and powdered sugar until smooth.
- Fill muffin cups halfway with batter, add a teaspoon of cream cheese mixture, then top with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
